True to Italian tradition a portion of the grapes are dried – conveniently in a neighbour’s solar-powered prune dehydrator – and added to the fresh grapes during fermentation. Subsequently, the wine is aged two years in selected old oak barrels to mature the wine rather than impart oak flavour. The vines were not pruned, but their skirts were raised to reduce yield, improve airflow within the canopy and achieve a harvestable height. Some vines had 500 bunches before skirting, a high bunch number that reduced berry set and produced very open bunches. The grapes were left to their natural defences through a very dry April (just 4mm of rain). The important noble fungus infection occurred after 48mm of rain fell in May provoking the desirable slow steady botrytis infection unfolding until dry conditions in June.\r\n\r\nDolcino is a blend of these two aromatic varieties. The grapes were harvested, the sauvignon blanc on 6 June and the viognier on 13 June. Half of the grapes displayed the noble fungus infection, while the other grapes were still green.\r\n\r\nThe grapes were immediately pressed and the meagre juice settled and fermented with natural yeast. Thankfully these yeasts were capable of fermenting the high sugar grapes. The wine was fermented for six months in oak, 20% new and 80% old. Afterwards, the wine was transferred into new French medium toast barrels to mature for 19 months. This wine is a blend of 94% Cabernet Sauvignon, 4% Malbec and 2% Cabernet Franc.\r\n\r\n \r\n\r\nThe colour is intense deep crimson. The nose is expressive and powerful, showing primary Cabernet characters of blackcurrant, mulberry and dark cherry combined with tight grained French oak. On opening the palate is dense, but shows great balance and finesse. There is a lovely softness and suppleness to the palate that overlays a powerful core of old vine Cabernet fruit. Hints of vanilla, mint and bay leaf emerge and combine with the primary fruit flavours as the wine opens up over the first hour. Given enough air and time, the tannins soften and the wine opens up to reveal more nuance, but still at this stage maintaining its youthful power. All 2014’s from Woodlands show the generosity of the vintage, and our Cabernet Sauvignon shows it most of all.
