My education includes a B.S. in Psychology and a minor in Biology from Texas AM University. I graduated Magna Cum Laude with dual degrees in Biochemistry and Biophysics from Oregon State University and was admitted to the PhD program in Biochemistry. Her winemaking experience includes Torii Mor, Hamacher, The Eyrie Vineyards, and ten years as winemaker at Scott Paul Wines (August 2005 to about mid-April 2015). Since then, I have happily worked for my own winery exclusively. Starting with the harvest of 2018, I have been producing my wines at the winery of dear, longtime friends, Ann and Dean Fisher of ADEA Wine Company. The wines are made to reflect the land, the vines, the fruit of the vines, the year, and everything else unknown and unseen that comes with those things. They are Oregon wines, and hopefully, they are wines specifically of their vineyards. That said, the wines are not really “made” at all.\r\n\r\n \r\n\r\nDundee Hills A.V.A. A new bottling in the Kelley Fox lineup, this is from a vineyard planted in the Dundee Hills with cuttings from Cameron's legendary Abbey Ridge vineyard. After finishing primary fermentation in a stainless tank, the Dux was racked to neutral Burgundy barrels (228L) made from French forests for élevage and malolactic fermentation. Its appearance is that of pale spun gold with brilliant transparency. Because of both its youth and seriousness, the nose as I type these words is restrained while also delicately perfumed with vanilla, pears and cream, along with a hint of salinity. This character continues in the mouth on a lovely frame and texture, ending with a long finish. I can’t wait to see what this Chardonnay does over time. I would suggest holding this wine for a few years before opening. Domaine Chevrot as it stands today was established in 1936 by the current winemakers’ grandparents. They purchased vines and a cellar that dates back to 1798. Their son Fernand and his wife Catherine started bottling and selling wines from the domaine in the 1970s. Now Pablo and Vincent, the third generation, are now in charge and have made two innovations: since 2008 the vineyards have been in converted to organic viticulture, and the new winery to be built in 2020. The vines are older, for the most part, with an average age of 30 years. The oldest plots, planted by the grandfather, are up to 75 years-old. They are using organic compost in the vineyards, working with a horse and manuel plow, and a minimum of copper and sulfur treatments as needed to treat odium and mildew. Wines of Chevrot have always been made in a traditional style. The lower end cuvées are destemmed and some whole clusters are kept on the 1er Cru cuvées. Only indigenous yeasts are used for fermentation.. After fermentation, the wines are put into barrels for ageing. Pablo and Vincent assess the amount of new oak applied to each cuvée, meeting the idiosyncrasies of each batch. Like most burgundian vignerons, their goal is to produce wines that express their terroir and express the best qualities of the vintage.\r\n\r\n \r\n\r\nThe beautiful terroirs of the Hautes Côtes provide this cuvée with great maturity balanced by the marine character of the Chardonnay grown on blue marls.
