He discovered a connection to nature early, studied viticulture and enology as a teenager in Bairrada, then spent about seven years training and working in Bordeaux and Burgundy before returning to Portugal to build his professional career in winemaking. Raposo worked closely with Dirk Niepoort for many years and became a key figure at Niepoort’s projects, helping shape both Douro and Vinho Verde programs; he left Niepoort around 2018 to pursue his own labels while maintaining collaborative ties on some projects.

The grapes selected for this wine are from the Senhorim Sub-Region. The age of the vines ranges between 30 and 60 years and are from mostly monovarietal vineyards. Typical grape varieties from the Dão region are composing this wine, such as Encruzado, Bical and Malvasia fina. The choice of the harvest day is decisive for the type of wine we want to make. The harvest day was on the 10th of September, harvesting only grapes with great potential. After careful transport to the winery using 15 kg boxes, the grapes were sent by gravity directly to the press. We pressed slowly and gently in order to extract and preserve the primary aromas of the grapes. For approximately 24 hours, the must was decanted in stainless steel vats. Then followed the alcoholic fermentation, in a temperature-controlled environment, without any addition of chemicals. The must fermented with native yeasts. The wine then aged for 11 months in French oak barrels.

Carlos Raposo is a Portuguese winemaker and entrepreneur who launched the World Wild Wines project to craft terroir‑driven, imaginative wines from the Dão and other Portuguese regions, aiming to make precise, elegant wines that reflect place and variety. Consisting of more than 7 white grape varieties, the grapes responsible for this part of the lot are from centuries-old vineyards, with the characteristics of Terras de Senhorim sub-region. The great challenge in these cases is to harvest in its perfect ripeness, taking into account that each grape varieties has its own ripening "time".
The harvest was on 15th of September, after a careful selection, the grapes were pressed with stems, very slowly and the must gently sended to a stainless steel vat. By accurately controlling the temperature, this must fermented with its indigenous yeasts, thus preserving its natural aromas. Its prolonged stage took place in french oak barrels expressly chosen for this.

Winemaking Vinho Verde:

These grapes were harvested from an ancient vineyard in the sub-region of Sousa, a fresh region of rich and granite soils, suited to the style of wine we sought for this blend. Being the date of harvest, the "Terroir" and the varieties crucial to the success of this blend, we harvest the varieties of Avesso and Alvarinho on different days. The grapes were carefully transported in 25 kg boxes to the winery, selected with the help of a selection table and sent to the press that gently separated the pulp from the seeds and skins. The must was carefully sent to a stainless steel vat where it slowly fermented with its indigenous yeasts, thus achieving the purest Nature gives us. Because this wine was with its "fine lees" since the fermentation, it has a singular character typical of the Avesso and Alvarinho varieties.
2961 bottles and 20 Magnum were bottled.

Tasting Notes:

Of citric color, in a balanced year like 2018, the white wine D&V-code, shows an exuberant floral aroma, with evident mineral notes. The wood and the mineral aromas of the Dão are in perfect harmony with a citric and floral profile of the Vinho Verde. Of great precision and good acidity, it transmits a genuine freshness and balance, in a long and complex length. The elegance and complexity characteristic of Dão's blend, married to the vibrant vivacity and personality of Vinho Verde, makes a balance wine! Madeira is a keen advocate of working the vineyards manually and organically, “to give life to the soils,” so the roots go deep (communicating with the mother rock) and the indigenous yeast population thrives. It is, he said, the way to express “minerality and all the flavours of the landscape.” He’s crafting phenomenal, terroir-focused wines and showing the potential of this often overlooked region.

His winemaking philosophy is simply to respect the grapes and the natural environment. Grapes are hand harvested and winemaking is gentle, aiming for minimal extraction. Using only 500l barrels whose oak has been very slowly toasted and stainless steel vats. Cultivating 30 different plots from 15 different vineyards totalling 6/7 hectares of vines. This is Burgundy scale parcellation! Most vineyards are located in the foothills of the Serra d’Estrela, but some are actually higher in the mountains. All of his wines are co-fermented field blends, using indigenous yeast and very little sulphur. If there’s a through line in his wines it would be a touch of salinity with ample freshness, an earthy quality like the first moments after it rains. Antonio Madeira is passionate about the traditions and heritage of the Dao’s Serra Da Estrela sub-zone and has nearly single-handedly rescued and preserved some of its most historical vineyards from abandonment.

Organic and biodynamic practices.

2021 was a year impacted by important rains on the Harvest period (more than 100mm in september). 2021 are low alcohol wines. 2021 was a fantastic year with fresh ripe grapes. As the first edition, Definido Red 2018 has a fine and elegant wine as a result of the intention to create a fine wine with a typical extraction from the Dao region. The grapes composing this wine are from different Sub-Regions of Dão. The age of the vines ranges between 60 and more 100 years. Many of these grapes come from monovarietal vineyards, but also from vineyards with a wide mixture of grape varieties typical of the region, such as Tinta Pinheira, Tinta Carvalha, Baga, Touriga Nacional, Touriga Feminino, Tinta Roriz, Alfrocheiro, Jaen, among others.

The grapes were harvested manually and the first selection happened directly in the field. Only the grapes suitable for our quality criteria were harvested. These were delicately transported in 15 kg boxes to our cellar where a strict sorting happened before processing them. Only the bunches that really proved to be perfect were sent by gravity to the old cement vats (1962), where alcoholic fermentation occurred naturally and without any addition of chemicals and / or yeasts. Then, part of the wine was transferred to age in in French oak barrels for 20 months. The remaining wine, after being cleaned from the bunches, aged in the same cement vat. During this stage, malolactic fermentation took place. 24 months later, a blend from a strict selection of each barrel was assembled for the Definido Red.

He is a particularly gifted winemaker, one who sees wine as a medium through which a piece of land can speak. “Cru” translates as “raw” in Portuguese, and the transmission of terroir here is unadulterated and singular. This series of wines is one in which he removes every variable but that of the land itself, and the stark expression of the soil that results is extraordinary.
