Meaning ‘little swallow’ in Italian, Rondinella is a versatile and generous bearing variety that relishes its adopted home in the Hilltops where at sunset swallows dart and swoop over the vines that gave this wine its name. Rondinella is a late ripener, typically harvested two months after the other varieties, in late April. This long, slow and even ripening is the key to its fresh persistent flavours and fine tannin structure. Made using the classic saignee method, draining the juice after a short time in contact with the grape skins, this palest pink, spicy rose displays a dry creamy palate with refreshing minerality balanced by soft tannins.
Freeman Vineyards is a boutique family-owned winery in the Hilltops region of New South Wales, renowned for its Italian-inspired wines and pioneering spirit. True to Italian tradition a portion of the grapes are dried – conveniently in a neighbour’s solar-powered prune dehydrator – and added to the fresh grapes during fermentation. It is bottle aged for an additional two years before release.

A selection of rondinella and corvina varieties were dried slowly for up to 10 days, the desiccated grapes added to the remaining harvest for fermentation. The vines were not pruned, but their skirts were raised to reduce yield, improve airflow within the canopy and achieve a harvestable height. Some vines had 500 bunches before skirting, a high bunch number that reduced berry set and produced very open bunches. The grapes were left to their natural defences through a very dry April (just 4mm of rain). The important noble fungus infection occurred after 48mm of rain fell in May provoking the desirable slow steady botrytis infection unfolding until dry conditions in June.

Dolcino is a blend of these two aromatic varieties. The grapes were harvested, the sauvignon blanc on 6 June and the viognier on 13 June. Half of the grapes displayed the noble fungus infection, while the other grapes were still green.

The grapes were immediately pressed and the meagre juice settled and fermented with natural yeast. Thankfully these yeasts were capable of fermenting the high sugar grapes. The wine was fermented for six months in oak, 20% new and 80% old. The only addition to the wine was a little sulphur at bottling.

Freeman Corvina Rondinella Corona 2016 is a blend of the two northern Italian origin varieties classically used to make two popular red wines – Bardolino (Lake Garda) and Valpolicella (Verona). The nose takes a little time to open, but patience is rewarded — fresh mulberries and blackberry compote interweave with cherry, violet and layers of red plum and cranberry, all lifted and vibrating with energy, with a touch of sweetness in the form of toffee apple woven through tight-grain oak. The power of the vintage really shows through on the palate: dense, driven and beautifully layered, with an array of dark fruits, cocoa bean, orange zest, star anise and a hint of black pepper. After being picked, the fruit was destemmed before passing over our vibrating sorting table. Once sorted and crushed, this wine was fermented in small closed fermenters. Following fermentation, the Cabernet Sauvignon must remained on skins for 28 days before being pressed for the secondary malolactic fermentation to occur. Afterwards, the wine was transferred into new French medium toast barrels to mature for 19 months. This wine is a blend of 94% Cabernet Sauvignon, 4% Malbec and 2% Cabernet Franc.

The colour is intense deep crimson. The nose is expressive and powerful, showing primary Cabernet characters of blackcurrant, mulberry and dark cherry combined with tight grained French oak. On opening the palate is dense, but shows great balance and finesse. There is a lovely softness and suppleness to the palate that overlays a powerful core of old vine Cabernet fruit. Hints of vanilla, mint and bay leaf emerge and combine with the primary fruit flavours as the wine opens up over the first hour. Given enough air and time, the tannins soften and the wine opens up to reveal more nuance, but still at this stage maintaining its youthful power. All 2014’s from Woodlands show the generosity of the vintage, and our Cabernet Sauvignon shows it most of all. This wine takes you straight to the Woodlands cellar, where you can smell the barrels being racked and washed, and the must being pressed – this wine still maintains the primacy it had straight off the press.

Croft is one of the most distinguished of all Port houses. This was partly due to the small amount of fruit and also to the effect of the very dry ripening season. Dormancy ended very early, with bud burst starting at Pinhão in the first week of March. The ripening season started with relatively cool weather which continued throughout July but in August this turned to intense heat. From July through to the harvest in September, there was almost no rain. These hot, arid conditions produced concentrated musts, rich in colour, tannins and sugar and by early September the grapes had reached phenolic maturity. Vineyards grow on 26 hectares, with plots spread out over plateaus forming terraces selected for the quality of the soil, which is composed primarily of clay on limestone. 1500mL

Grenache 40%, Cinsault 25%, Syrah 25%, Rolle 10%
A blend of the first Pinot Noir grands crus from the Montagne de Reims with a touch of Chardonnay (respectively about 90% - 10%). Its specific style and colour are the result of blending in about 8% of red wine produced from old vines on the hill of Aÿ, particularly from a plot known as “Meurtet”. The vines are very well sited and belong to Deutz. The red wine is made by our cellar-master. After almost three years ageing on its lees, the aromas have softened and harmonised, giving this Brut Rosé a particularly subtle nose, and a very interesting mixture of softness and freshness on the palate. This can be enjoyed as much as an aperitif as with a meal, where it would provide the perfect foil for salmon cooked with mushrooms, beef carpaccio, duck with red berry sauces, roast lamb chops or certain fresh and creamy cheese, such as Chaource or Brillat Savarin.

A cuvee named after the founder of the house, William Deutz. An early start to the harvest ensured that the wines had a good acid balance and avoided over ripeness.

Croft is 100% farmed from the magnificent terraced Quinta da Roêda close to Pinhão and is now also 100% foot-trodden.

One of the original founding Port houses, Croft traces its origins to 1588 when the company was established in England. A light swirling immediately awakens the aromatics to offer blackberry, Seville orange marmalade, blueberries and dried fig – complex and quite compelling. There is real mineralite within this bouquet that, returning after 30 minutes, offers alluring ocean spray scents rolling in off the ocean. The palate is medium-bodied with a velvety-smooth opening that belies the fine, structured tannins underneath. It clams up a little towards the finish, shuts the lid tight and consequently there is the sensation of less persistency here compared to the Taylor’s or Fonseca. But Croft has a knack of filling out with bottle age and becomes both gentle and generous with the passing years. A near perfect viticultural year in the Douro Valley culminated in an outstanding 2011 harvest and the production of wines of exceptional quality.

The winter preceding the 2011 harvest was cold and wet. The weather station at Croft’s Quinta da Roêda registered 496 mm of rainfall between 1st November and 31st March compared to a 30-year average of 358mm. The rain proved very beneficial, replenishing depleted ground water reserves and allowing a balanced ripening of the grapes during the hot dry summer which followed. Budburst occurred at the normal time towards the end of the third week of March and wet and relatively warm conditions in April encouraged vigorous growth. From early May conditions turned generally dry and remained so for most of the summer.

Croft is 100% farmed from the magnificent terraced Quinta da Roêda close to Pinhão and is now also 100% foot-trodden.

//cdn.shopify.com/s/files/1/0727/8644/4357/files/b02f5274-barme_CC_81s_buecher_riesling_new_label.jpg?v=1777951260
domaine-barmes-buecher-riesling-clos-sand-2020
Domaine Barmes Buecher Riesling ‘Clos Sand’ 2019
Barmès Buecher is a Domaine with a unique energy and harmony. Founded in 1999 by Dr. Brian Freeman, a former head of wine science at Charles Sturt University. Brian transitioned from academia to winemaking, bringing deep viticultural expertise to the Hilltops region. Situated in Prunevale, Hilltops, at 560 metres above sea level, the vineyard benefits from cool nights and sunny days during ripening, deep granite soils mixed with red silt, sand from central Australia and well-drained terrain, ideal for growing high-quality grapes.

Freeman Vineyards is Australia’s only producer of the northern Italian grape varieties Rondinella and Corvina, used in their flagship Secco. Other Italian varietals include Nebbiolo, Sangiovese, Aleatico, Prosecco, Fiano, Pinot Grigio, and an obscure varietal for Australia, Furmint. Their priority is well crafted wines with a focus on textural complexity, balance, and food-friendliness.

Dr Brian Freeman spent much of his life in research and education, in the latter with a role as head of CSU’s viticulture and oenology campus. In '04 he purchased the neighbouring 30yo Demondrille vineyard, renamed Altura vineyard. He has since acquired several other vineyards within a 10km radius, all adding to the original Hilltops estate. In all, he has 27 varieties that range from staples such as shiraz, cabernet sauvignon, semillon and riesling through to more exotic varieties such as furmint and Italian varieties prosecco, pinot grigio, sangiovese, nebbiolo, rondinella and corvina. -JAMES HALLIDAY

As distinct from Freeman ‘Secco’, Freeman Robusta is crafted entirely from corvina grapes, all of which are partially dried for 10 days in a neighbour’s prune dehydrator, prior to a prolonged two-month fermentation. Subsequent ageing in old oak barrels for two years allows the powerful tannins to integrate and enrich the palate.
