The power of the vintage really shows through on the palate: dense, driven and beautifully layered, with an array of dark fruits, cocoa bean, orange zest, star anise and a hint of black pepper. Serious structure and tannin sit just beneath the surface, finished with bright, energetic acidity. This is a wine that's asking to be cellared, and one that will truly reward the wait. After being picked, the fruit was destemmed before passing over our vibrating sorting table. Once sorted and crushed, this wine was fermented in small closed fermenters. Following fermentation, the Cabernet Sauvignon must remained on skins for 28 days before being pressed for the secondary malolactic fermentation to occur. Afterwards, the wine was transferred into new French medium toast barrels to mature for 19 months. This wine is a blend of 94% Cabernet Sauvignon, 4% Malbec and 2% Cabernet Franc.\r\n\r\n \r\n\r\nThe colour is intense deep crimson. The nose is expressive and powerful, showing primary Cabernet characters of blackcurrant, mulberry and dark cherry combined with tight grained French oak. On opening the palate is dense, but shows great balance and finesse. There is a lovely softness and suppleness to the palate that overlays a powerful core of old vine Cabernet fruit. Hints of vanilla, mint and bay leaf emerge and combine with the primary fruit flavours as the wine opens up over the first hour. Given enough air and time, the tannins soften and the wine opens up to reveal more nuance, but still at this stage maintaining its youthful power. All 2014’s from Woodlands show the generosity of the vintage, and our Cabernet Sauvignon shows it most of all. The idea came to make a “right bank” Saint-Émilion blend and call it “Emily”. When the decision was made to purchase the Woodlands Brook Vineyard, we certainly believed its existing plantings to be serendipitous – no Cabernet Sauvignon (yet), but there was Merlot, Cabernet Franc, Malbec and Petit Verdot planted on a gentle north facing slope of sandy loam.  So, from 2008 ‘Emily’ became both our expression of the “right bank” blend, and the expression of that site at Woodlands Brook. This wine is made in very limited quantities, with only 300 cases being able to be produced each year. Woodlands believe that 2016 may go down in history as Margaret River’s greatest vintage. A perfect warm summer was interrupted by 90mm of rain in mid January, after which the great conditions continued. Our unirrigated vines loved the drink, and went on to produce wines of class and restrained power, balanced by great natural acidity. Like all red wines at Woodlands, this wine was destemmed and sorted by our gravity fed system. Once harvested and in the winery, the fruit was delivered to the destemmer by a vibrating hopper, where the stems are removed by a swinging motion. Once destemmed, the fruit passed over a vibrating sorting table. After time blackcurrant and brambly fruits appear, as well as undergrowth and forest floor complexities. After even more time, darker fruits emerge, the flavours integrate more, and the tannin becomes more prominent and textured. Following fermentation, the Cabernet Sauvignon must remained on skins for 28 days before being pressed for the secondary malolactic fermentation to occur. Afterwards, the wine was transferred into new French medium toast barrels to mature for 19 months. This wine is a blend of 94% Cabernet Sauvignon, 4% Malbec and 2% Cabernet Franc.\r\n\r\n \r\n\r\nThe colour is intense deep crimson. The nose is expressive and powerful, showing primary Cabernet characters of blackcurrant, mulberry and dark cherry combined with tight grained French oak. On opening the palate is dense, but shows great balance and finesse. There is a lovely softness and suppleness to the palate that overlays a powerful core of old vine Cabernet fruit. Hints of vanilla, mint and bay leaf emerge and combine with the primary fruit flavours as the wine opens up over the first hour. Given enough air and time, the tannins soften and the wine opens up to reveal more nuance, but still at this stage maintaining its youthful power. All 2014’s from Woodlands show the generosity of the vintage, and our Cabernet Sauvignon shows it most of all. David Watson and his great friend Peter Anderson discussed what to do with the remaining Cabernet Franc, Malbec, Merlot, and a little Cabernet Sauvignon. The idea came to make a “right bank” Saint-Émilion blend and call it “Emily”.   When the decision was made to purchase the Woodlands Brook Vineyard, we certainly believed its existing plantings to be serendipitous – no Cabernet Sauvignon (yet), but there was Merlot, Cabernet Franc, Malbec and Petit Verdot planted on a gentle north facing slope of sandy loam.  So, from 2008 ‘Emily’ became both our expression of the “right bank” blend, and the expression of that site at Woodlands Brook. This wine is made in very limited quantities, with only 300 cases being able to be produced each year. Like all red wines at Woodlands, this wine was destemmed and sorted by our gravity fed system. Once harvested and in the winery, the fruit was delivered to the destemmer by a vibrating hopper, where the stems are removed by a swinging motion. Once destemmed, the fruit passed over a vibrating sorting table. Following fermentation this wine was matured in French oak barrels for 14 months, of which forty percent were new.
