The soil is made of very deep clay, with calcareous rocks. At this altitude, with deep soils and a gently windy climate, the Mourvèdre gives its best, between strength and elegance.\r\n\r\n \r\n\r\nAverage age of vines:  39 years.\r\n\r\n \r\n\r\nThe grapes are hand-harvested and sorted in the vineyard. They are then sorted again at the cellar before being de-stemmed. The fermentation lasts 20 days in concrete tanks, with smooth pumping over each day. The wines are aged 18 months in oak tank of 30 hl.\r\n\r\n \r\n\r\nVintage : 2014  began with a very wet winter.    Spring was quite dry and conditions were good and healthy for the growing vines.  The summer was dry although quite cool which led us to believe that harvesting would be late. However welcome rains at the end of August and a rise in temperature in September helped accelerate the maturity of the grapes. Regenerative agriculture is the focus, with potential longevity of the vines bolstered by organic farming methods and biodiversity. The estate lies over a dozen hectares including ten hectares of Châteauneuf-du-Pape in Le Grand Coulet, Les Serres, La Crau Est, and Le Pointu in the communes of Sorgues, Châteauneuf du-Pape and Courthézon. This is accompanied by two hectares of Côtes-du-Rhône nearby. The objective of vinification is to highlight their old vine Grenache, Mourvèdre, Cinsault, and Syrah vines, and most of the Grenache vines are 80-120 years old.\r\n\r\n \r\n\r\nThe 2022 Châteauneuf-du-Pape exhales a deep, complex and gourmand bouquet of cherries, flowers, spices and red berries, followed by a medium to full-bodied, textured and layered, sappy and enrobing palate with velvety tannins, seamless structure and an elegant, fruity and ethereal finish. Slightly more structured than the 2021, this is a real success. Domaine Mayard is becoming a noteworthy estate for those who appreciate the bright, lively, delicate and aromatic style of Châteauneuf-du-Pape. The wine incorporates fruit from several of the top Rhône vineyards in Paso Robles, each vineyard selected for its quality. Like many red wines from the Rhône Valley, it is based on the dark fruit, mineral and spice of Syrah. To that Syrah, we incorporate the brightness and fresh acidity of Grenache, the structure and meatiness of Mourvèdre, and small additions of Counoise for complexity and Terret Noir for spice.\r\n\r\n \r\n\r\nGrapes for the Patelin de Tablas are sourced from five regions in Paso Robles. Three are limestone-rich: the warmer, higher-elevation Adelaida District near Tablas Creek, the cool, coastal-influenced Templeton Gap to our south, and the moderate, hilly El Pomar to our south-east. These regions provide structured, mineral-laced fruit and excellent acidity. We also source fruit from the warmer heartland of the Paso Robles AVA: the Estrella and Geneseo Districts, whose mixed sandy loam soils produce juicy, vibrant Syrah.\r\n\r\n \r\n\u003cp style=\"margin-top: 20px;\"\u003eThe 2022 vintage was our third year of drought, but because the rain that we received came early, the vines showed good health though with cluster counts down by about 15%. A cool first half of the summer was followed by our hottest-ever August and September, producing an early start and an even earlier finish to harvest. The search lasted four years, from 1985 to 1989. The Perrins ultimately settled on the western reaches of Paso Robles, just 12 miles from the Pacific Ocean in what is now the Adelaida District.\r\n\u0026amp;nbsp;\r\n\r\nThe 2019 vintage began with ample rainfall the preceding winter. The wet soils delayed budbreak to a little after normal, and a cool first half of the summer delayed flowering and the ripening of our earlier varieties. Beginning the second week of July, the weather turned warm but never so warm to engage the vines’ self-defence mechanism of shutting down, accelerating ripening of our later varieties and producing intense flavours. The resulting compressed harvest was completed under ideal conditions and the vintage shows both concentration and freshness, with bright acids framing ample fruit.\r\n\u003cp style=\"margin-top: 20px;\"\u003eThe grapes were fermented using native yeasts in a mix of 1500-gallon wooden upright fermenters, open-top tanks and closed stainless steel fermenters. After pressing, the wines were moved into barrel and allowed to complete malolactic fermentation.
