True to Italian tradition a portion of the grapes are dried – conveniently in a neighbour’s solar-powered prune dehydrator – and added to the fresh grapes during fermentation. Subsequently, the wine is aged two years in selected old oak barrels to mature the wine rather than impart oak flavour. It is bottle aged for an additional two years before release.\r\n\r\n \r\n\r\nA selection of rondinella and corvina varieties were dried slowly for up to 10 days, the desiccated grapes added to the remaining harvest for fermentation. The vines were not pruned, but their skirts were raised to reduce yield, improve airflow within the canopy and achieve a harvestable height. Some vines had 500 bunches before skirting, a high bunch number that reduced berry set and produced very open bunches. The grapes were left to their natural defences through a very dry April (just 4mm of rain). The important noble fungus infection occurred after 48mm of rain fell in May provoking the desirable slow steady botrytis infection unfolding until dry conditions in June.\r\n\r\nDolcino is a blend of these two aromatic varieties. The grapes were harvested, the sauvignon blanc on 6 June and the viognier on 13 June. Half of the grapes displayed the noble fungus infection, while the other grapes were still green.\r\n\r\nThe grapes were immediately pressed and the meagre juice settled and fermented with natural yeast. Thankfully these yeasts were capable of fermenting the high sugar grapes. The wine was fermented for six months in oak, 20% new and 80% old. Following fermentation, the Cabernet Sauvignon must remained on skins for 28 days before being pressed for the secondary malolactic fermentation to occur. Afterwards, the wine was transferred into new French medium toast barrels to mature for 19 months. This wine is a blend of 94% Cabernet Sauvignon, 4% Malbec and 2% Cabernet Franc.\r\n\r\n \r\n\r\nThe colour is intense deep crimson. The nose is expressive and powerful, showing primary Cabernet characters of blackcurrant, mulberry and dark cherry combined with tight grained French oak. On opening the palate is dense, but shows great balance and finesse. There is a lovely softness and suppleness to the palate that overlays a powerful core of old vine Cabernet fruit. Hints of vanilla, mint and bay leaf emerge and combine with the primary fruit flavours as the wine opens up over the first hour. Given enough air and time, the tannins soften and the wine opens up to reveal more nuance, but still at this stage maintaining its youthful power. All 2014’s from Woodlands show the generosity of the vintage, and our Cabernet Sauvignon shows it most of all. David Watson and his great friend Peter Anderson discussed what to do with the remaining Cabernet Franc, Malbec, Merlot, and a little Cabernet Sauvignon. The idea came to make a “right bank” Saint-Émilion blend and call it “Emily”. When the decision was made to purchase the Woodlands Brook Vineyard, we certainly believed its existing plantings to be serendipitous – no Cabernet Sauvignon (yet), but there was Merlot, Cabernet Franc, Malbec and Petit Verdot planted on a gentle north facing slope of sandy loam.  So, from 2008 ‘Emily’ became both our expression of the “right bank” blend, and the expression of that site at Woodlands Brook. This wine is made in very limited quantities, with only 300 cases being able to be produced each year. Woodlands believe that 2016 may go down in history as Margaret River’s greatest vintage. A perfect warm summer was interrupted by 90mm of rain in mid January, after which the great conditions continued. Our unirrigated vines loved the drink, and went on to produce wines of class and restrained power, balanced by great natural acidity. Like all red wines at Woodlands, this wine was destemmed and sorted by our gravity fed system. Once harvested and in the winery, the fruit was delivered to the destemmer by a vibrating hopper, where the stems are removed by a swinging motion. Once destemmed, the fruit passed over a vibrating sorting table. These are “honest, sturdy and rustic” wines according to wine writer, Clive Coates. The Chevrot family has been making wine in Maranges since 1830. Domaine Chevrot as it stands today was established in 1936 by the current winemakers’ grandparents. They purchased vines and a cellar that dates back to 1798. Their son Fernand and his wife Catherine started bottling and selling wines from the domaine in the 1970s. Now Pablo and Vincent, the third generation, are now in charge and have made two innovations: since 2008 the vineyards have been in converted to organic viticulture, and the new winery to be built in 2020. The vines are older, for the most part, with an average age of 30 years. The oldest plots, planted by the grandfather, are up to 75 years-old. They are using organic compost in the vineyards, working with a horse and manuel plow, and a minimum of copper and sulfur treatments as needed to treat odium and mildew. Wines of Chevrot have always been made in a traditional style. The lower end cuvées are destemmed and some whole clusters are kept on the 1er Cru cuvées. Only indigenous yeasts are used for fermentation.. After fermentation, the wines are put into barrels for ageing. Pablo and Vincent assess the amount of new oak applied to each cuvée, meeting the idiosyncrasies of each batch. Like most burgundian vignerons, their goal is to produce wines that express their terroir and express the best qualities of the vintage.\r\n\r\n \r\n\r\nThe beautiful terroirs of the Hautes Côtes provide this cuvée with great maturity balanced by the marine character of the Chardonnay grown on blue marls. This Hautes Côtes de Beaune offers a complex bouquet. The fruitiness dominated by pear, lemon and fresh almond is enhanced when stirred with spicy notes of peppermint and fennel.
