This Santenay 2015 offers an imposing bouquet of apricot and exotic fruits, mango and pineapple to the fore, sublimated by the notes of brioche and oak from fermentation and ageing for 16 months in Burgundy oak barrels. After swirling, vegetal aromas of mint, rose and sage speak volumes of this wine’s complexity. The palate offers powerful harmonies of well-ripened yellow fruits on a music-like score that is all voluptuousness and vivacity, long and persistent on the fruit. This rich and exuberant wine is self-sufficient, but the match with a foie gras or an old Comté cheese has already been tried and tested, and a little courage will allow an encounter with Japanese cuisine or white meat tajines.
