This wine was born in 2008, from the desire of head viticulturalist and winemaker, Ayana Misawa, to make a dry rosé with structure in Japan. The varietal composition changes from year to year, Merlot, Cabernet Sauvignon, and Cabernet Franc grown at the Misawa Vineyard without herbicides or chemical fertilizers applied are separated into small lots and are fermented separately by direct press and the Saignée method, followed by maturation in old French oak barrels. By doing so, the wine expresses both the complexity of the varietal characters and the sense of place.
Serious Rose, for the connoisseur who is looking for complexity and cellar worthy characters. Fermentation and maturation in seasoned French oak barrels.
