The Spirit represents the identity of the AOC and also that of the estate.
L’Esprit is a dry white wine made from Chenin, harvested by hand then directly pressed. Its vinification and aging are exclusively done in sandstone amphorae. The vines grow on clay, limestone and flint soils. The choice of the amphora allows its characteristics to be best expressed in the wine.
